This Event will feature Five Champagnes and Five Champagne Pairing Appetizers, designed by our Chef to enhance your Champagne Tasting Experience. You will learn a wealth of knowledge from Laurence about Ayala Champagnes as you journey through the Champagnes of Ayala's Cellar and experience the differing levels and variations designed by the Winemaker to showcase the many sides of Champagne, the Beverage and the Region.

NV Ayala Brut Nature, $59.99 Retail
Paired with Valencia Almonds

This demonstrates a NO-DOSAGE version of CHAMPAGNE
This designation denotes that there is NO presence of Dosage, known as liqueur d’expédition in France, which is a mixture of wine and sugary syrup that ideally balances the perception of acidity in the Champagne and also has a hand in the bottle’s final sweetness. This Champagne, unlike all the others has NO ADDED DOSAGE or SUGAR.

TASTING NOTES:

The color is bright gold, with a silver hue. The nose is direct but fine, and marked by precise notes of citrus fruit with a saline component. On the palate, the wine is complex and clean. It remains full of purity and tension, delivering dry mineral notes along with flavors of grapefruit and white fruit.

The Brut designation denotes the Level of Dosage is Very Low but Present

TASTING NOTES:

Brut Majeur is a blend of Chardonnay (40%), Pinot Noir (40%) and Pinot Meunier (20%). Pinot Noir and Chardonnay bring vinosity and delicacy together in a very harmoniously balanced blend. The complement of Pinot Meunier adds a charming touch of fruitiness and liveliness.

NV Ajala Brut Rose Majeur, $69.99 Retail
Paired with Sweet & Spicy Deviled Eggs

This demonstrates a BRUT ROSE version of CHAMPAGNE
The Brut designation denotes the Level of Dosage is Very Low but Present, and the Rose designation indicates that a portion of Red Grapes was used which were allowed to macerate on their skins for a brief time to extract pigments and making the Champagne Pink in Color.

TASTING NOTES:

Rosé Majeur is the perfect embodiment of the originality and finesse of the House’s wines. Made predominantly from Chardonnay, it is crafted with the addition of a small proportion of still Pinot Noir from the best crus of the Montagne de Reims. A low dosage enables it to express the House style, both feminine and generous, with great elegance. The very high proportion of Chardonnay and the aging process result in a Champagne with remarkable finesse. Brut Rosé Majeur is a blend of Chardonnay (51%), Pinot Noir (40%) and Pinot Meunier (9%). Brut Rosé Majeur shines with freshness on the palate, offering immediate pleasure and well-balanced flavors.

This demonstrates a BLANC de BLANC version of CHAMPAGNE
The Blanc de Blancs or "Whites from Whites" designation denotes the Champagne is 100% Chardonnay, or Made from White Grapes.

TASTING NOTES:

Ayala Blanc de Blancs 2013 is 100% Chardonnay from 3 Grand and 2 Premier Cru villages on the Côte des Blancs: Cramant (25%), Chouilly (23%), Le Mesnil-sur-Oger (14%), Cuis (25%) and Vertus (13%). Right from the start, this wine is striking, yet voluptuous and vibrant, showing a silky texture with a lively edge, and finishing with a balanced bittersweet flavor. It releases notes of passion fruits, citrus fruit, ripe white fruit such as vine peaches, and subtle notes of acacia honey that bring a velvety sensation. The long finish is tightly wound on the pure line of characteristic chalky minerality for which the Côte des Blancs is famous.

2006 Cuvee Perle de Ayala, $149.99 Retail

This demonstrates a VINTAGE version of CHAMPAGNE
The Vintage designation indicates that the Champagne is Made 100% with Fruit from one single Vintage (Year), and that it has spend a minimum three years on its lees or the particles remaining in the Champagne after fermentation. This adds complexity of Flavor to the Champagne.   

TASTING NOTES:

2006 was a year with mixed, but lucky weather. A rainy spring followed by a very hot summer slowed ripeness, but important rainfall and a cool September ensured maturation of the fruit. Expert sorting of fruit from some of the region’s finest vineyards helped assure that the 2006 vintage would turn out especially concentrated and full of character. A striking pale gold in color. There is a nutty complexity that is balanced by a wonderful perfume of peach, lemon and lime aromas. As you continue to enjoy this wine, you get rich pastry notes on the palate and a fleshy, round finish that lingers.
